Needing little introduction, the Tikka is probably the most popular of kebabs. Tikka, meaning `bits’ or ‘pieces,’ refers to chunks of meat or vegetables that are marinated in yogurt and spices, threaded on to skewers and then grilled over an open charcoal flame. Lathered with butter or ghee as they cook ensures they retain flavour and are soft and succulent.
Most popularly served as a Chicken offering, Tikka kebabs are an absolute staple at late night street grills throughout Bombay.
